Ingredients
- One NYPB mixed bundle
- Kosher salt and black pepper
- Neutral oil
- Two quick sauces or compound butters

Method
- Step 1: Group proteins by cooking method and thickness. Thaw them safely in the refrigerator.
- Step 2: Prepare sides and sauces before heating the grill or pans.
- Step 3: Cook chicken and sausages first, using clean utensils and platters for finished food.
- Step 4: Cook thick steaks over two zones and thinner cuts over direct heat. Check every item individually.
- Step 5: Rest whole cuts, slice larger steaks across the grain, and label the platter so guests know each cut.
