How to Cook Veal Chops

Veal chops have a mild flavor and tender texture. A hard initial sear followed by gentler finishing heat creates good browning without rushing the center.
Pan-sear and oven-finish
- Pat the chops dry and season with salt and pepper.
- Preheat the oven to 375°F.
- Heat an oven-safe skillet over medium-high heat with a small amount of oil.
- Sear the chops until browned, then turn and brown the second side.
- Transfer the skillet to the oven and cook until the center reaches the appropriate temperature.
- Rest before serving.
Simple pan sauce
After removing the chops, pour off excess fat. Deglaze with stock or wine, scrape up the browned bits, reduce briefly, and finish with butter and herbs.
