How to Roast Marrow Bones

Roasted marrow bones make a rich appetizer with very little preparation. Canoe-cut bones expose the marrow, allowing the surface to brown while the center becomes soft and spoonable.
Roasting method
- Heat the oven to 450°F.
- Arrange the bones cut-side up on a foil-lined, rimmed sheet pan.
- Season lightly with salt and pepper.
- Roast until the marrow is hot, softened, and beginning to bubble. Start checking around 15 minutes; size and starting temperature affect timing.
- Serve immediately.
How to serve marrow
Offer grilled bread or toast, flaky salt, chopped parsley, and something acidic such as lemon, pickled onions, or a sharp herb salad. The acidity balances the richness.
Handling note
Keep raw bones refrigerated and prevent their juices from contacting ready-to-eat foods. Clean and sanitize surfaces and utensils after preparation.
