How to Cook Crab Cakes and Surf & Turf

Surf and turf works best when both parts are simple. Cook the steak using your preferred method, then prepare the seafood close to serving time so neither component waits too long.

Pan-searing crab cakes

  1. Keep the crab cakes chilled until the pan is ready.
  2. Heat a thin layer of neutral oil or clarified butter over medium heat.
  3. Place the crab cakes in the pan without crowding them.
  4. Cook until the first side is golden and releases easily, then turn carefully and brown the second side.
  5. Cook seafood thoroughly and follow the product instructions.

Timing surf and turf

Cook the steak first and let it rest while the crab cakes finish. Resting gives the steak time to settle while allowing the seafood to arrive hot.

Simple accompaniments

  • Lemon wedges and herb butter
  • Roasted asparagus or green beans
  • Mashed potatoes or a crisp salad
  • Remoulade or a light mustard sauce
